Here's a complete, sample recipe taken from page 137. This delicious soup is easy to make and takes very little time to prepare: Ingredients:
Our Fresh Gazpacho
Prep Time: 10 min | Servings: 4
|4 cups || Fresh tomato juice (juice approx. 6 tomatoes) |
|3 cups || Tomato, diced |
|1 1/2 cups || Cucumber, peeled and diced |
|1/2 cup || Green bell pepper, diced |
|1/2 cup || Fresh cilantro, chopped |
|2 || Stalks celery, diced |
|2 || Ripe avocados, peeled, pitted and diced |
|5 || Cloves garlic, minced |
|2 tbsp || Olive Oil |
|1 tbsp || Fresh lemon juice |
|1/2 cup || Green onions, chopped (for garnish) |
In a large mixing bowl, combine all of the ingredients and mix well. In a blender, add half of the mixture and blend until smooth. Pour blended ingredients into mixing bowl and mix well. Cover and refrigerate for 3 to 6 hours. Serve cold and garnished with chopped green onions.
